Join Melissa Miranda as she makes Lumpiang Sariwa, Filipino spring rolls packed full of fresh vegetables and tofu. While this dish isn't always vegetarian, this medley of veggies bring a beautiful color and snap to the spring rolls. And instead of using store-bought wrappers, Melissa makes her own that consist of just five ingredients, but are packed with flavor.

INGREDIENTS:
Wrapper:
½ cup all-purpose flour
¾ cup cornstarch
1 tsp. kosher salt
1 ½ cups water
5 large eggs
Non-stick cooking spray

Filling:
2 large carrots, peeled and cubed
1 cup peeled and cubed sweet potatoes
½ head purple cabbage, shredded
1 cup green beans, cut on a diagonal
½ medium onion, chopped
¼ cup finely chopped garlic, divided
½ block extra-firm tofu (about 7 oz.), drained and cubed
1 Tbsp. vegetable oil
Nutritional yeast to taste
1 Tbsp. liquid amino acids

Sauce:
½ cup light brown sugar
1 cup coconut milk
1 Tbsp. amino acids
2 Tbsp. cornstarch

Assembly:
1 small head red or green lettuce
Garlic, finely chopped
½ cup cilantro, chopped and divided
Peanuts, roughly chopped
Johnny's seasoning salt, or salt and pepper, to taste

if someone has only smelled cheese and never tasted it, yes, nutritional yeast tastes vaguely of an aftertaste of cheese. It's also not terribly nutritious- try and find it un-fortified then see where the nutrition is.

We didn't put coconut in our lumpia sauce but garlic, soy sauce,pepper, sugar, cornstarch and anis.

As far as I know, a coconut sauce isnt really common for fresh lumpia. I think most people just use a cornstarch thickened sauce with sugar + soy sauce + minced garlic and top with crushed peanuts.

It's actually way better if you julienne your veggies, also fry the tofu before adding. It would add a little bit of crunch and would be more likely to keep its structure

Just a comment out there, the accent pronunciation is loom-PYÂ, so it's accented on the last syllable, and there's a hard stop at A. Sariwa ("fresh") is accented on the second syllable and stops at a hard A. sa-REE-wà. Lumpiang (translates to "lumpia that is ___") is read as loom-PYÁNG. Together it's read as loom-PYÁNG sa-REE-wà. And Lumpiang Sariwa means lumpia that is fresh.
